Kallies Kale Yes Autumn Salad

Protein Packed revival of what used to be my green nemesis (kale) until my friend made me this amazing concoction that I hesitate to label as salad lest it be judged as anything less than an amazing flavor and health toss of various showstoppers like Manchego, Crunchy Red Grapes, Pine Nuts, and crushed raw almonds. Oh, and the dressing? I kind of want to drink it from the mason jar.


It's fall, and with seasonal cooking, this is a winner, all of these ingredients are easy to find early fall, the grapes are falling off the vines and kale is everywhere in the garden. If you don't have a garden in your life ye,t check out these farm boxes, I've had one for the past 5 years and it was a game changer. Whatever is not in my garden I can get the same taste and quality plus I know Im supporting local farmers and organic farms which the world needs right now.


Serves 4

  • One Bunch of Lacinato or Curly Kale -Massage said Kale with Salt and Olive oil- rip up into pieces

    *Bonus Hand Spa! Just rub in the olive oil and salt into your hands when you are done and enjoy an organic hand spa for soft skin for days!

  • Pine Nuts

  • Crushed almonds

  • Pumpkin seeds

  • Halved Red crunchy fresh organic grapes

  • Raw Manchego Cheese sliced thin


Dressing


Mix all the dressing into a jar

toss salad

add dressing at last minute or keep on the side in a little jar for lunch boxes:)
