Filet Mignon & Lions Mane Japchea Noodles

I love korean japchea, this is just my simple shoutout to this wonderful dish, with my little Ajan twist on it;) You can find tons of traditional videos and recipes everywhere if you just search korean japchea to see what it's all about. For me eating out has too many variables with this kind of dish and when I make it at home I know what's in it and that it fits all the dietary health preferences and needs at the table. For example, I skip soy as it affects hormones, and I skip cane sugar to avoid inflammation, and gluten for the same reason. The result is super fresh korean style noodles that won't upset even the most delicate of tums.
One package of Sweet Potatoe Noodles (no you cant just use other noodles) try your local asian market:)
One small bag of Jimmy Nardello Sweet Peppers
One small bag or box of Green Shisito Peppers
Lions Mane (Now were talking! This dish is packed with super foods!)
1 bunch of green onions
1 white onion
3 cloves of garlic
1 bundle of spinach or bok choy
3 carrots
sesame seeds
filet mignon - sliced into thin strips
Start by boiling the noodles for 6 minutes and rinsing them in cld water, strain and set aside.
Make Sauce:
1/4 cup Cocomino (this is what I sub for the Soy sauce)
1 Tsp Coconut sugar or Date sugar (this is what I sub for cane sugar)
chopped garlic
a little salt
Put some of the sauce with the filet mignon and set aside
Chop all the veg
start a wok with some sesame oil
start with the thick stuff that takes longer like the white onion, carrots, bok choy
then a few min later add the medium stuff like the peppers and mushrooms and meat and green onions
lastly add the spinach and sesame seeds
toss all with the rest of the sauce and noodles
great the next day in a glass lunch box!
