One Egg Mayo

Skip the store, the $12 cost, and the plastic packaging. This quick simple mayo I have mastered so you can also skip the R&D it took me to get it to be easy and consistent.


Organic Mayonnaise

Makes almost one full mason jar

  • One Egg (farm fresh even better look for pasture raised on the carton or find a friend with chickens or quails and do a trade! 3 quail eggs equal one chicken egg)

  • One cup Avocado Oil ( it's the healthiest and olive oil is way to pungent for this!)

  • 1 tsp. Mustard (check out my Homemade mustard here)

  • 1 tsp apple cider vinegar

  • 1 half or 1 quarter of a lemon juice

  • Vitamix (if you don't have one give it a go, i used to use my food processor and it took FORever, once i succumbed to trying it in the vitamix, despite it being trickier to get out, it was so worth it, takes 2 min versus 20)


Toss egg, 1/4 of the oil and the rest into vitamix until creamy looking

Next: while lid is on but the little top hole is open leave blender running on low while you slooooooooowly add the rest of the oil. If it starts to sound like water sloshing, stop. let it get thick again and continue.

Will also thicken in fridge so dont be dismayed if it's not super thick, should be between slightly melted mayo and fully fluffy mayo when you're done, depends on weather and temp of ingredients. Another reason I like the vita mix vs other, it's faster so it stays cooler and thickens better.
