Apple Coffee &Tea Cake

Oh my goodness do I LOVE this recipe. For tea lovers, gluten free-ers, and sugar avoiders, we know that every cafe's baked goods case is just full of delicious looking things that we can never touch with a ten foot pole, and even if we did, it's all just way too sweet! The flavor of the day is no longer pure sugar, here the tables have turned. I have created a delicate, moist cake but crunchy crumbly top, and yes the wonderful addition of fall apples, like honeycrisp! Perfect pairing with your fine Oolong teas, and guess what? Everyone in your house will not know it's missing the aforementioned ingredients that so plague our pastry world. Rejoice in the Fall-y Goodness of Apple Coffee and Tea Cake!
The Cake
2 cups gluten fre flour - I like Namaste Organic GF Flour
1 cup almond flour
1/2 cup butter
2 egg
1/2 cup milk ( I use my homemade nut milk here)
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt
1 tsp ceylon cinnamon (other stuff is not cinnamon!)
2 cups of chopped apples (I like to do 3 when I want it really fruit heavy)
Topping
1/2 cup gf flour
1/2 cup almond flour
1/2 cup butter
1 tsp cinnamon
For the Cake:
Preheat oven to 350*
Mix in a large bowl, stand mixer if you have it with a paddle attachment, the almond flour, eggs, vanilla, butter
Mix in a dry bowl everything else for the cake
add dry with the butter mixture, all together now
Add the apples
Put cake batter into a greased 9x9 pan
Start topping
mix all topping ingredients together just until crumbly
top cake
bake for 35-45 min
COOL 10 minutes
