Goat Cheese Honey Thyme Flatbread

I have been making this for the last 25 years. I don't remember how it happened, I think at one point I was living with a fig tree and started looking into what to do with lots of them. Somewhere I heard that thyme went good with honey and I knew goat cheese went with figs so viola. Now I love doing this on my woodfired pizza oven but you can totally do this with any crust thick or thin and also very good on puff pastry! You can make them little or big and share them or eat the whole thing standing up;)
Aquire said crust, homemade, packaged, puff pastry or otherwise, probably in a pinch would taste good on a nice artisanal cracker.
Brush crust with lots of olive oil
drizzle honey all over
sprinkle chevre goat cheese log all over
sprinkle fresh picked thyme all over (sorry no, dried is not the same in this situation)
bake at high heat-oven like 522 for ten minutes-woodfired pizza oven about 6 minutes-if using puff pastry or something else use the directions on the box for your crust or flatbread.
once pizza is out, place fresh sliced, hopefully green as thats my favorite for this, figs all over the top.
